Pasta with chicken, capers and tomato sauce
Fancy putting a delicious pasta dish on the table? With this flavoursome pasta dish, you're in the right place. It is very easy and quick to prepare. The chicken can be omitted or replaced by turkey, duck, or another poultry or by a solid white fish, mussels or squid. The pasta is packed with healthy prebiotic fibre.
Recipe:
For 2 persons:
- 100 to 200 g Tr-eat pasta of your choice (50-100 g per person)
- 300 to 400 g chicken breast ( 150 - 200 g per person or 1 chicken breast per person)
- 1 teaspoon minced spice mix*
- 1 shallot
- 1 clove of garlic
- 30 g capers
- 3 anchovies
- 400 g tomato sauce of your choice
- olive oil
- lemon zest
- fresh basil
Cut the chicken breast into small pieces with a sharp knife. Add 1 teaspoon of minced herbs and mix the herbs into the meat. Finely chop 1 shallot and crush 1 clove of garlic.
Fry the chicken meat golden brown in some olive oil. Remove the fried meat from the pan. Pour some olive oil into the pan and add the shallot and garlic. Leave to glaze for a while. Add the anchovies and capers. Fry briefly and then add the tomato sauce. Leave to simmer for a while. Season with pepper and salt. (Note that the sauce is already lightly salted by the anchovies).
Cook the pasta al dente according to the cooking instructions mentioned on the packet.
Mix the sauce with the pasta and chicken. Serve with some fresh basil and lemon zest.

* If you don't have mince spice mix at home, make it yourself by mixing 1 teaspoon salt, nutmeg, pepper, paprika, onion powder, ginger powder, ground coriander, garlic powder. Store in a sealed jar. Use 1 teaspoon of this spice mix for this recipe.
