Creamy Red Pepper Penne
This delicious recipe for a creamy red pepper pasta dish is ready in 15 minutes! Put this on the table and you will only get happy faces and a happy gut!

Recipe:
For 3 persons
- 250 g Healthy Penne
- 120 g cashew nuts
- 1 clove of garlic
- 1/2 l almond milk
- 1 tsp sea salt
- 1/4 tsp black pepper
- juice of 1/2 lemon
- 150 g roasted red pepper (may be from a jar)
- handful of fresh basil
Cook the pasta al dente in lightly salted, boiling water for 5 minutes. Drain the pasta and rinse under cold running water.
Cook the cashews together with the garlic in boiling water for 5 minutes. Drain and rinse thoroughly under running water.
Blend the garlic, cashews, almond milk, paprika, lemon juice, salt and pepper in the blender until smooth.
Warm the sauce and stir in the penne. Serve with fresh basil.
