This delicious pasta dish is very easy to make. Here, it’s served with a piece of pan-seared salmon. But a piece of pan-seared chicken, turkey, or duck goes just as well with it. You can choose any pasta you like: will you go for the fusilli like in the picture, choose the penne tricolore for more color, or go all-in on keto with the keto penne?
Recipe:
Serves 4
- 500 g cherry tomatoes
- 2 red onions
- 1 zucchini
- 250 g Healthy Fusilli
- fresh basil
- fresh salmon or poultry (optional)
- salt and pepper
- olive oil
Slice the zucchini and fry the slices with a little oil on a hot griddle or in a hot pan. Season with a little salt. As soon as the slices are browned, flip them over and fry the other side.
Cut the cherry tomatoes in half and slice the red onions into thin rings. Heat a splash of olive oil in a pan and sauté the onions and tomatoes until they are thoroughly cooked. Blend until smooth. Season well with salt and pepper. Add another splash of olive oil if desired.
Cook the Healthy Fusilli in lightly salted water for 5 minutes until al dente. Remove from the heat and rinse under running water. Drain the fusilli.
Add the fusilli to the tomato sauce. Serve with a piece of pan-seared salmon or poultry. Or serve as a vegetarian dish with some fresh basil.
