Fusilli with courgette and cherry tomato sauce
This delicious pasta dish is very easy to prepare. Served here with a piece of baked salmon. But a piece of fried chicken, turkey or duck is equally delicious with this. You can choose any pasta: go for the Fusilli as shown, choose the Penne Tricolore for more colour or go all keto with the Keto Penne?
Recipe:
For 4 persons
- 500 g cherry tomatoes
- 2 red onions
- 1 courgette
- 250 g Healthy Fusilli
- fresh basil
- fresh salmon or gevolgte (optional)
- salt and pepper
- olive oil
Slice the courgette and fry them with some fat on a hot plate or pan. Season with some salt. Once the slices are coloured, turn over and fry the other side.
Halve the cherry tomatoes and cut the red onions into fine rings. Heat a dash of olive oil in a pan and sauté the onion and tomatoes until well cooked. Blend finely to make a smooth sauce. Season well with salt and pepper. Add another dash of olive oil if necessary.
Boil the Healthy Fusilli for 5 minutes al dente in lightly salted water. Remove from the heat and rinse under running water. Drain the fusilli.
Add the fusilli to the tomato sauce. Serve with a piece of baked salmon or poultry. Or serve as a vegetarian dish with some fresh basil.
