Keto Penne with butternut and smoked salmon

Pasta and pumpkin: a perfect combination for autumn. The velvety sauce of the pumpkin, combined with smoked salmon, will have you putting a delicious pasta on the table in no time. Do you use the Keto Penne Then turn this recipe into a real fat burner too.

Recipe:

For 3-4 people:

• 200 g Keto Penne or Tr-eat pasta of your choice
• 1 butternut squash (+/-800 g)
• 120 ml chicken stock
• 2 tbsp olive oil or ghee
• 1 clove of garlic
• a few fresh sage leaves
• handful of chopped parsley
• salt and pepper
• smoked salmon (100-150 g per person)

Dice the butternut squash.

If you have a thermomix, you can put all the ingredients (except the pasta, salmon and parsley) in the thermomix. Let heat up to 98°C for about 20 minutes and remove the sage leaves. And blend to a smooth sauce.

If you don't have a thermomix, proceed as follows:

Boil or steam the cubes of butternut squash with the clove of garlic and the sage until tender. You can also cook them in the oven. Afterwards, remove the sage leaves.

Blend the cooked cubes of butternut squash, the clove of garlic, the chicken stock, olive oil or ghee into a smooth sauce. And season with salt and pepper.

Meanwhile, cook the pasta according to the instructions on the packet until tender.

Mix the pasta under the sauce and serve with the smoked salmon and finish with some parsley.

Tip: You can flavour the sauce even more with other autumnal seasonings like nutmeg or cayenne pepper.
