Keto Penne with rocket pesto
This delicious pasta recipe with salmon and arugula pesto is so quick to prepare. It is also super healthy, gluten-free and lacose-free. And contains very few carbs and lots of fibre. The ideal pasta: low carb, keto, delicious and easy!

For 2 persons:
- 50 to 100g Keto Penne per capita
- 100 g arugula
- 15 g fresh basil
- 1 clove of garlic
- 20 g pine nuts
- 20 g pistachios
- juice of 1/2 to 1 lime or 1 to 2 tbsp lemon juice
- 100 ml olive oil
- 2 pieces of salmon
- salt and pepper
Cook the pasta for 5 minutes. Rinse the pasta thoroughly under lukewarm running water. Set pasta aside and try to keep warm
Pat the salmon dry with kitchen paper. Sprinkle the salmon on both sides with freshly ground salt and pepper.
Fry the salmon for about 3 min until golden brown. When the salmon is golden brown, turn over with a frying spatula, lower the heat and cook for another 3-4 min, depending on the thickness of the fillet. The inside should still be slightly glazy, but almost fall apart when you prick it with a fork.
Meanwhile, while the salmon is frying, prepare the rocket pesto. In a dry frying pan, toast the pine nuts for 1 min until golden brown. Leave to cool. Briefly blend the rocket, basil, garlic, pistachios, pine nuts, olive oil and the lemon or lime juice until smooth. Season with salt and salt to taste. If the pesto is too solid, you can keep adding some water.
Mix the pasta with the pesto and reheat if necessary. Place the baked salmon on top of the pasta.
Serve with a few leaves of ruculo and basil, some coarsely chopped pistachios and a few drops of olive oil.
Tasty!
Tip: this dish can also be served without salmon and is also delicious with fried chicken or white fish or a soft-boiled egg or with burrata.
